Istihalah (استحالة) means transformation. When a substance changes completely into a new substance with different properties, many scholars hold that the ruling changes too. The classic example is wine turning into vinegar, which is halal.
Scholars differ on how far this applies to modern processing — for example whether gelatine from pigs has truly transformed. This is why views on gelatine, tartaric acid and some medicines differ.
